The result is a green-colored drink that becomes violently cloudy when water is added.
It is one of the few 100% natural absinthes
Louche or Dove Method: Sugar is placed in a spoon and held on top of a tall glass that holds an ounce of green Absinthe. Then ice cold water is allowed to drip through the sugar so that the drops fall little by little into the glass. Each drop turns into a snow-white cloud.
The sugar softens the strong flavor of the absinthe with this attractive method; the color change of the drink, drop by drop, seems like a magical alchemy.

THE DISTILLERY
Marí Mayans Distilleries was founded in 1880 by Juan Marí Mayans, to whom his father, a surgeon by profession, fond of aromatic and medicinal plants, and a student of their properties, transmitted all his knowledge. The formulas of these distillates have been passed from generation to generation until the current one, the great-grandchildren of its creator.
