Elaboration The varieties are harvested at their optimum ripeness point. Vinification is carried out separately at a controlled temperature and in stainless steel tanks, with pump-overs during maceration that lasts about 15 days, depending on the variety. Malolactic fermentation is spontaneous and takes place in stainless steel tanks. Aged in second-use French and American oak barrels for 4 months, to give it greater complexity and roundness. The final coupage is made. A gentle clarification and stabilization at low temperature precedes its bottling.
tasting note
Ruby red color, clean and bright. Intense aroma with notes of ripe red fruit combined with spicy notes (pepper and cloves). In the mouth it is tasty and of good concentration. Soft, persistent tannins and a long finish.
