THE CELLAR
Can Ràfols dels Caus has always been a leader and even a creator of currents, and twenty-five years after the start of his oenological adventure, Carlos Esteva decided to take a big step forward with the construction of a new winery. The objective was not to accommodate more tubs, hectoliters, and bottles, but rather to work better. With this project, the house multiplied its qualitative potential, since everything was already geared towards further working on microvinifications, further separating batches, and continuing to investigate. A winery was designed completely embedded in the bedrock of Garraf, the dolomite, invisible from the outside, fully integrated into the landscape. With a vinification room, microvinifications, and a level aging room for maximum control. The new cellar is projected in staggered levels to facilitate the decanting of the wine by gravity. It has vats of different capacities to be able to vinify the different varieties separately. This allows for long aging in the bottle.
