VARIETY 100% Tempranillo
PREPARATION and AGING. Fermentation temperatures are controlled up to 28-29ºC and devatting is rapid, when it can be seen that the extraction of color (anthocyanins and tannins) reaches optimal levels. 14 months in American oak, 8 months in the bottle. The color is cherry with ruby iridescence and an intense background, with a deep red meniscus, almost scarlet. On the nose, it shows noble woods, evidencing coconut and vanilla, on a subtle and fragrant background of ripe fruits, reminiscent of Christmas compote. There is also a liquor background. On the palate it is fresh and harmonious but with character. Good blend of fruit and new wood.
